1 tin of chopped tomatoes
1 white onion 1 clove garlic vegetable stock 2 sticks of celery 1/2 bulb of fennel 75g spicy chorizo handful of olives 1 lemon 1 bag of spinach fresh parsley selection of defrosted or fresh fish If using white fish use firm meaty fish that will hold up such as cod or monkfish. You can get assorted bags of frozen fish from the supermarket that include prawns, squid & mussels. These are great value & brilliant to have in!
If you are a real fish fan, you can even cook whole sardines in this sauce. The flavour is amazing & they are definitely great value for money but requires a little more effort to eat!

Fish Stew for Two!
This classic yet simple one pot could not be easier. Using staple store cupboard ingredients & frozen fish you can glam it up with a glass of wine or snuggle on down with a blanket & a chunk of crusty bread. Be confident & make the dish your own, using whatever fish you enjoy.
Chop onion into 1cm squares, fry in a little oil.
Initially on a high heat for that immediate sizzle then on a low heat to soften & release those gorgeous sweet flavours.
Whilst your onions are frying, chop the garlic & finely slice the fennel & celery. Add these to the pan to soften. Once the ingredients are soft, add the cubes of chorizo. Cook until the chorizo has released all its gorgeous sweet, smokey & spicy flavours.
Add the tinned tomatoes, stock cube & half a tin of water. Cover & simmer on a low heat for 20 minutes, stirring occasionally.
Using a potato peeler, peal strips of zest from the lemon & add to the pan with the olives. Add as much or as little as you like depending on your taste. Leave to simmer for a further 10 minutes.
If using any chunks of fish add them to you pan & cook for 3 minutes before adding your other fish & cooking for a further 5 minutes.
Sardines will take about 5 minutes each side in the sauce. Turn off the heat, stir in the spinach, parsley & season with salt & pepper to taste.
Enjoy simply as it is in a bowl or serve with a herby cous cous, crusty bread or extra greens!
