This sauce gets blitzed so save time & roughly chop your ingredients. Chop the onion and fry on a medium heat until golden brown Meanwhile chop your garlic, chilli, fresh ginger, pepper & coriander, including the storks. Bash the lemongrass using a knife handle or rolling pin, add to the pan with all the spices & remaining ingredients just chopped, apart from the pepper. Keep stirring whilst you enjoy the aromas. When the spices start to stick, add a little water to loosen. Cook for a further few minutes before adding the chopped red pepper, coconut milk, stock & tomato puree. Leave to cook for 40 minutes - 1 hour, adding a little more water if desired. Using a blending stick or a jug, blend all the ingredients together. Pour the curry sauce back into the pan adding your chosen ingredients, heat until cooked. Serve & enjoy!
