This recipe is so tasty that you will not even pass consideration to its lack of dough!
For me, gluten is one of the most difficult ingredients to replace, so I am really excited to share this recipe with you. The base is crispy & holds its shape & strength delivering a mouthwatering cheese & tomato hit of happiness without the flop!
Although this recipe is simple, there are a few steps involved but the results are well worth it!
Method
Chopp your cauliflower into pieces & whizz in a food processor until small cauliflower crumbs. You will probably have to do this in a few batches.
Steam the cauliflower until soft, stirring every now & then to ensure even cooking. Depending on the size of your cauliflower this will take between 10-20 minutes.
Once cooked lay out on a clean t-towel & leave to cool.
Once cool enough to handle, squeeze as much moisture out of the cauliflower as you can. You may have to use a couple of t-towels for this process.
The key to this dish is to get your cauliflower as dry as possible for a crispy base.
Weigh your cauliflower in a bowl. Divide the weight of the cauliflower by 10 to give you the weight needed for the ground almonds & cheese. Add everything to the bowl, seasoning well.
Bring the mix together with your hands until it comes together. On a piece of baking paper press out to form your base, about the depth of 50p coin.
Place a pizza stone or tray in the oven on its hottest setting. Once upto temperature, carefully transfer your base on to the stone or tray & bake for 7-10 minutes.
Once your base has browned & crispy enough to handle, flipp over and return to the oven for a further 5 minutes.
Once evenly coloured, spread tomato puree or BBQ sauce over the base and layer up with your chosen toppings.
Reduce the oven temperature to 200 & cook for 10-15 minutes until all the cheese has melted & your pizza is pipping throughout.
