Crowd Pleasing Curry
Curry is one of our nations favourite dishes. There are so many tasty variations. This curry always hits the spot in our house! Warming, aromatic & incredibly versatile.
Incredibly simple to make! Everything just gets added to one pan before blitzing together. Don’t be put off by any of the ingredients. They are all readily available on the shelves with your general weekly shop. Once you have tasted this curry, you will want to make it over & over!
Method
This sauce gets blitzed so save time & roughly chop your ingredients.
Chop the onion and fry on a medium heat until golden brown
Meanwhile chop your garlic, chilli, fresh ginger, pepper & coriander, including the storks.
Bash the lemongrass using a knife handle or rolling pin, add to the pan with all the spices & remaining ingredients just chopped, apart from the pepper.
Keep stirring whilst you enjoy the aromas.
When the spices start to stick, add a little water to loosen.
Cook for a further few minutes before adding the chopped red pepper, coconut milk, stock & tomato puree.
Leave to cook for 40 minutes – 1 hour, adding a little more water if desired.
Using a blending stick or a jug, blend all the ingredients together.
Pour the curry sauce back into the pan adding your chosen ingredients, heat until cooked.

Ingredients
1 x white onion
1 x clove garlic
1 red chilli
1 red pepper
4cm piece fresh ginger
1 lemon grass
large bunch coriander
1 tin coconut milk
2 tbsp tomato puree
chicken or vegetable stock
spices:
1 tsp ground coriander
1 tsp ground cumin
2 tsp turmeric
2 tsp garam masala
1 star anise
Your choice of flavour: chicken|sweet potato| chickpeas|spinach|prawns
Serve with: rice|naan bread|vegetables
